Portobello Mushroom, Apple, and Goat Cheese Salad: Makes 6-8 Servings
1/2 c walnuts
1 lb assorted mushrooms, trimmed and coarsely chopped
Olive Oil/Balsamic Vinaigrette and Italian salad seasoning packet +/-stevia for a sweeter taste
1 (4 oz) package arugula, or spring mix thoroughly washed
1 large apple, thinly sliced, Gala works well
3 oz. goat cheese, crumbled
1 sliced green pepper
Prep:
Place walnuts in a single layer on baking sheet. Bake at 350 degrees for 8-10 minutes until browned. Pour about 1 oz. of salad dressing mix in a large skillet over medium heat; add mushrooms, and saute 6 minutes or until tender. Remove from heat, and let cool for 15 minutes. Toss together greens, apple, mushrooms, green pepper, and desired amount of salad dressing. Transfer to a serving dish, and sprinkle with toasted walnuts and goat cheese.
